MIKE specializes in Shima-Oden (a one-pot dish with various ingredients stewed in a light soy-flavoured broth) made with ingredients from Awaji Island in Hyogo Prefecture.
Awaji Island, known as “Miketsukuni” has been designated worthy of supplying food to the Imperial family since ancient times. The sea and mountains of this region offer an abundance of quality ingredients.
The “Onokoroshizuku salt” made from the natural sea water of Awaji Island cooked in an iron pot over firewood, mineral rich Kombu kelp, and the special dried bonito shavings give a clean yet deep taste to our Dashi.
“Shima-Oden” is the perfect marriage of the Awaji Island’s ingredients and our special Dashi.
